Spongolit® 560 Aerating Emulsifier: Aerated structure with no trans fats!

With Spongolit® 560, Cognis has developed a universally applicable aerating emulsifier for cakes that makes it easy for formulators to improve volume, crumb texture, and shelf life. Spongolit® 560 is suitable for all types of cakes. Especially relevant for those interested in formulating healthier products, Spongolit® 560 along with trans fatty acid-free oils can replace hydrogenated shortenings which are high in trans fat. Developed for use in a wide variety of cakes made from whipped batters, Spongolit® 560 is ideal for the popular “all-in-one method”, where all ingredients are added and mixed at the same time. In addition to an appealing crumb texture, it gives cakes the elasticity and strength to absorb moisture and ensure suitability with cream fillings. Lamequick®: Wide range of whipping bases for aerated applications!

Cognis is introducing a new whipping agent, Lamequick® CE 7203, targeting formulators looking to improve the functionality of dessert products. Truly a new generation of whipping agents, Lamequick® CE 7203 is unique in being a non-hydrogenated but highly functional whipping agent. The Lamequick® products are spray-dried powders that are based on vegetable fat, with aerating emulsifiers and milk proteins. When whipped with milk or water, they produce light and creamy foams with superior stability. Lamequick® is well-suited for ready-to-eat mousses and also provides basic functionality for aerated desserts, cake decorating, cream fillings and soft-serve ice-cream.
Lametop® DATEMs improve bakery applications for lower costs

Cognis is launching Lametop® S 80 DATEM emulsifier for yeast-raised bakery applications, including bread, rolls and croissants. DATEM is an acronym for Di-Acetyl Tartrate Ester of Monoglyceride, which are used to strengthen doughs by building a stronger gluten network.
While DATEM’s are a widely accepted and established category of emulsifiers, the Lametop® S 80 is especially effective at low use levels, offering a cost effective ingredient with proven functionality. Lametop® emulsifiers help stabilize the dough, improve mixing and fermentation tolerance, and increase the volume of the final product. Cognis has significantly improved the application performance of these emulsifiers while offering customers significant cost benefits. Cognis recently established a new manufacturing facility in Illertissen, Germany, dedicated to producing cost-effective DATEMs that improve performance of yeast-raised baked goods. Manufactures can cut costs with these high-performance emulsifiers because a lower use level is required to achieve superior results.
