Lametop S 80® – a new high-performance emulsifier for bakery applications
Consumers today expect baked goods to both look and taste good, with high volume and a good crumb structure – and to achieve this, manufacturers need highly effective emulsifiers. However, there are also regulatory restrictions governing the composition of additives that can be used in baked goods. In Lametop S 80, Cognis has now developed an innovative solution that delivers outstanding performance, even within the restrictive FCC specifications.
In the manufacture of yeast-raised baked goods, DATEMs – emulsifiers made from mono- and diglycerides, tartaric acid and acetic acid – have been used since the early 1960s. They strengthen the gluten and stabilize the dough, improve mixing and fermentation tolerance, and increase the volume of the final product. A normal indicator of the quality of a DATEM is its tartaric acid content – generally speaking, the higher, the better. However, the North American FCC specification limits tartaric acid content to a maximum of between 17 and 20 percent. Lametop S 80 from Cognis is a superior-quality DATEM, which contains more baking active components than other DATEMs with the same tartaric acid content. This enables manufacturers to comply with FCC guidelines.
Lametop S 80 – a tailor-made solution for specific applications
During the manufacturing process of DATEMs, a large number of slightly different types of molecules are formed, not all of which are active in the baking process. Cognis conducted a year-long research program to develop new analytical and manufacturing tools, and one of the results of this was a new dedicated DATEM manufacturing plant. These advances have enabled the company to create DATEMs with a higher content of those molecules which contribute actively to the baking process. The optimized manufacturing technology brings the expensive tartaric acid precisely to the point at which the optimum effectiveness is achieved. Using Lametop S 80 helps manufacturers to reduce costs as a lower dosage is required. At the same time, the product improves performance – without exceeding the FCC’s tartaric acid limit. The product can be used in all yeast-raised baked goods such as bread, rolls and croissants.
